Grilled Prime rib beef 🇦🇷🥩
🍇When thinking of Argentina, the first wines that come to mind are youthful and fruity Malbecs. As enjoyable as these are, Argentina can offer an array of wonderfully aged red wines on par with some of the great wines of the world. Unsurprisingly, some of these amazing bottles are Cabernet based, rather than Malbec, although finely aged Malbec can be great on its own. Some of this wines before the 90s, were aged in very large oak casks, allowing for a very slow oxidation. With vineyards harvested earlier, wines were more tannic and acidic, providing a firm structure that supports their longevity.
For a red wine that has been maturing for more than 30 years aim at a cut of beef that is full of flavor, marbled and tender: a Prime Rib matured for a total of 28 days, allowing for tenderness and flavor concentration, but without altering its original qualities. With the prime rib we serve a purée of 90 days aged potatoes, and black truffle from Espartillar, in Buenos Aires Province. The ageing of the potato increases its acidity, and develops complex earthy notes, perfectly matching with fully developed red wines.

The texture of the beef, full of marbled richness is a perfect match for the polished and refined tannins of the wine. The very complex aroma, where fruit has made way to a bouquet of earth, mushrooms, savoury smokiness and dark spices complements the deep truffle aroma and the complexity of the aged beef. A classic and tested pairing, and yet it remains pleasant and enticing to the senses.
