On 11-14th of September Kuala Lumpur, Malaysia 🇲🇾, welcomed 46 sommeliers (mainly from Asia & Oceania) for the 2nd edition of ASI Bootcamp!
3 intense days of masterclasses, practical and theoretical sessions, blind tastings - a total of 26 classes were held! And around 2000 glasses polished for the event (we are not counting the bottles 😉)!

We hope that these days will help our sommeliers to prepare for future exams and competitions (like the Best Sommelier of Asia&Oceania this November in Tokyo, or the Best Sommelier of the World in Paris next February), but mainly to excel in every day job!🍷

This would not be possible without the support of the tutors, who volunteer to teach our sommeliers, and partners, who support ASI in our initiatives! 👐

Stay tuned for #asibootcampamericas2023!

Pairing Tuesdays 🍷🍴

Venezuela 🇻🇪

🍽️ Pabellon Criollo is Venezuelas national dish. It is composed of cooked white rice, shredded meat, refried black caraotas (beans) and fried ripe platanos (bananas). The Pabellon Criollo began to be prepared in the eighteenth century with the colonies. Its three main ingredients «honor» the three cultures that have influenced Venezuela: white rice (European), meat (indigenous) and black beans (African).

The most important flavors are, the sweetness of fried platanos, the earthiness of the beans and of course the meat cooked with onions and aji dulce criollo (creole sweet peppers) which leads us to a complex but yet fruity wine.

🍷 For this savory dish ideal pairing would be an Italian Valentini Montepulciano DAbruzzo 2012. Intense and full of fruit aromas but also some flowery notes, mouth filling with a long aftertaste and educated tannins. The typical acidity of this Montepulciano will clean up the platanos sweetness and the alcohol and tannins will match perfectly with the oiliness and succulence of this dish. A very interesting and pleasant arm wrestling between food and wine.
