The new virtuoso of the Clos de l'Oratoire des Papes 🍷
The mystery is finally revealed after several years of patience. François Miquel, general manager, and Edouard Guérin, technical director, lift the veil on a sublime white wine that is an ode to salinity: Les Chorégies white, in the 2021 vintage. 🤩
To give life to this great wine, old vines of Clairette and Bourboulenc were vinified apart after several years of rigorous and unrelenting work in the vineyard. These two rarely planted varieties are amongst the least aromatic, but were chosen as they enable us to capture the quintessence and the salinity of the coarse limestone soils. To attain this ultimate expression, they are harvested early to create a real homage to their terroir.🍇
Six meters underground, in a troglodyte cellar, the new Les Chorégies white is vinified and aged in clay amphorae and 300 liter French oak barrels for 9 months.
The nose of immense finesse expresses delicate aromas of white fruit and vanilla underlined by nutty, toasted notes. A voyage of the senses follows, where perfect balance between opulence, tension and salinity in the mouth reveals all the typicity of the limestone soils from which Les Chorégies white springs. 😋

Pairing Tuesdays 🍴🍷
Schnitzel, Austria 🇦🇹
This dish boasts a rich history and a delectable taste that's sure to captivate your taste buds. 🤤 Let's uncover the essence of this culinary masterpiece:
🏰 **Origins & Ingredients**: The Schnitzel traces its origins back to 19th century Vienna, where it quickly became a beloved comfort food. Traditionally crafted from veal, pork, or chicken, the meat is tenderized, coated in breadcrumbs, and lightly fried to golden perfection. The result? A crispy, flavorful exterior that gives way to tender meat inside.
🍷 **Perfect Wine Pairings**: Elevate your Schnitzel experience with the right wine! For a classic pairing, opt for a crisp Grüner Veltliner. Its zesty acidity beautifully complements the dish's fried nature. If red wine is your preference, a light Zweigelt with berry notes will also work wonders.
🍻 **Local Beverages**: Immerse yourself in Austrian culture by sipping on local beverages that harmonize with your Schnitzel. Enjoy a cold glass of Stiegl, a refreshing lager that cleanses your palate between bites. For those seeking a bolder option, delve into a glass of Schnapps, a fruit brandy that packs a punch of flavor.
🥤 **Non-Alcoholic Alternatives**: Fear not, non-drinkers! Austrian cuisine caters to everyone. Quench your thirst with Almdudler, a herbal lemonade that balances the richness of the Schnitzel. If you're in the mood for something warm, a soothing herbal tea like Melisse (lemon balm) is a splendid choice.
